Our second and/or third anchors will be deployed as bottom and weather conditions dictate. We have an aluminum alloy Spade 140 (33 lbs) with 50 feet of 3/8" galvanized BBB chain, and 300 ft of 3/4" 3-strand nylon, with a galvanized thimble spliced on each end.
We also have an aluminum Fortress FX-55 (31 lbs), with 25 feet of 3/8" galvanized BBB chain, and if needed, 350 ft of 3/4" double-braid nylon for a third rode. This third rode the same rode we use with our storm drogue. The chain lengths and rode thimbles are either screw-pin shackled or stainless swiveled, so they can be easily swapped among rode and anchors.
We keep both of these anchors disassembled in the aft deck locker unless we are frequenting stern-set anchorages. When needed, the Fortress mounts on the stern rail. Modifications to the bow roller would be required to accommodate the Spade.
For a snubber we have 75 feet of 3-strand nylon with a 3/8" chain hook on the end. We also have a 3/8" chain "plate-type" grabber and the needed parts to build a bridle, but we have not constructed it yet. Once we figure our which arrangement works best -- both from a "shock load" and "sailing around the anchor" perspective, we'll rig a more permanent solution with splices around galvanized thimbles.
